I don't have deer problems, but people who do have told me that deer will eat just about anything if they get hungry.

Yeah, they will eat just about anything if they're on their glide path and they're sufficiently hungry. I've seen them eat bittersweet vine (yuck!) during a bad summer.
Thuja plicata x standishii is one that comes to mind. Deer don't precisely care for it...but won't ignore it either if the food supply is low.
