Many people ask about the NPK of various organic materials. Although I strongly disagree with the idea of using NPK to measure the value of organic materials, here they are as determined by the Primal Seed Company.  Unfortunately they missed some of the mainstays of organic fertilizer, but you can get a good idea of the relative food value of many materials here.  From this list more nitrogen means more protein.
